Cheesy Creamy Potatoes soup with Ham and Peas


It is that time of the year, when the grill gets put away and your crock pot gets put to good use for some comfort food :) Here is a recipe that inspired me after eating scalloped potatoes this weekend ;)

1 cup frozen peas
1 1/2 cup chopped ham
2 cups chopped potatoes
1/4 cup chopped bacon
1/2 chopped onion
2 TBLS finely chopped chives
2 TBLS flour
1/2 cup of chicken broth
1 cup of heavy whipping cream
1 /2 cup Swiss cheese
1/2 cup grated griar or Romano cheese


Cook the bacon and onion in a pot, remove grease. Add the potatoes with ham and cook for 3 minutes. Add the chicken broth, heavy whipping cream, and chives. Simmer for 10 minutes. Then add the peas cook for 5 minutes. Add the flour and whisk so there are not any clumps, then add the cheese and mix well. Let stand for 5 minutes. Walla you have a very hearty soup. You may also top it with croutons :)

Jennas Faboulous Sugar Cookies :)

Yummy, as my lovely sis in law was making this my mouth was water so I had to ask for the recipe of course :) Here is her amazing sugar cookie recipe :)!!!!!


4-6 cups of flour
1 TB baking powder
1 tea spool nutmeg
1 pinch of salt
2 1/2 cups of sugar
1 1/2 c shortening
1 teaspoon baking soda
1 cup of sour milk
3 eggs beaten
2 tea spoon vanilla

pre-heat oven at 350
Line cookie sheet with parchment.
Stir together, 4 cups of flour to starts, cut in shortening. Stir in remaining ingredients, stirring as little as possible, add flour as necessary for rolling consistency. Roll out 1.4" thick, cut out. Bake for 7-8 minutes

and if you want to make these cookies extra delicious add some cookie glaze recipe below :)

2 cups of powdered sugar
1 tea spook melted butter
dash of salt
1 tea spoon of vanilla
food coloring if it is a holiday
couple tablespoons of milk, make thing enough to spread **** not runny

Carmel Apple Cheese Cake


Can you say, heavenly??? Because that is what this recipe taste like, a slice of heaven!!!!




Ingredients
• 2 cups all-purpose flour
• 1/2 cup firmly packed brown sugar
• 1 cup (2 sticks) butter, softened
• 2 (8-ounce) packages cream cheese, softened
• 1/2 cup sugar, plus 2 tablespoons, divided
• 2 large eggs
• 1 teaspoon vanilla extract
• 3 Granny Smith apples, peeled, cored and finely chopped
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• Streusel topping, recipe follows
• 1/2 cup caramel topping

Streusel Topping:
• 1 cup firmly packed brown sugar
• 1 cup all-purpose flour
• 1/2 cup quick cooking oats
• 1/2 cup (1 stick) butter, softened
In a small bowl, combine all ingredients.


Directions
Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 13 by 9 by 2-inch baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 30 minutes, or until filling is set. Drizzle with caramel topping.

There was Always a Britney.......

There was always a Britney

Yes, I have joined the "Glee Fan Club"!!! Don't hate!! Last night as I visited with my aunt and made dinner, I reminded her that we had to plan and cook quickly because Glee would be on and most importantly it was a Britney Spears theme!!! She laughed, I told her she would not be laughing for much longer until she saw the show and knew exactly why I liked it!!! So after dinner, we sat on the couch as I tried to quickly catch her up on what was happening, I don't think I have ever spoken so fast in my life and I speak Spanish LOL. So as soon as it came back, it brought back memories of my high school days. My high school days when I was in shape, a lot thinner, had the strength of a horse and the speed of a cheetah!! So when the Britney dances where performed on Glee, I got up and did the dances along.... or so I thought. My aunt said I had not changed at all since I was a kid. Remember when you pretended to be a power ranger?, (I was always the pink one) when you watched the show, or if you were a boy you pretended to be Michael Angelo from the Ninja Turtles. Well that was me all over again during Glee, except I was not up to speed. After hitting my pinky toe, it was time for intermission for me :) Moral of this story, I am not in high school any more but there was always a Britney Spears song we performed too!!!

Mexican Potatoe and Cheese Soup with Roasted Peppers




Sigh it is that time of the season where grilling gets replaced with comfort foods, where people begin to get colds and resort to a nice bowl of soup :) Yummy soup my favorite. I love love love potatoes and I could eat them for days on end, I also love cheese. So I thought hmmm.... I need a couple of my favorite ingredients to make a soup. So last night I experimented in making a new soup, and boy oh boy was it delicious. So here it is I hope you all enjoy it as much as I did :)




What you need:


3 California peppers


2 tomatoes


2-3 potatoes chopped in quarter moon size


4 slices of bacon chopped into bite size pieces


1/4 cup chopped onion


1 tea spoon of ground cumin


1 chicken bullion cube


1 cup shredded pepper jack cheese




Prepare:


Roast the pepper and the tomatoes. Peel the tomatoes and add in the blender with 3 cups of water and set aside. Peel the roasted pepper remove the seeds. Chop into bite size pieces and set aside.


* if you do not want to roast peppers you can buy the chopped roasted peppers in a can.




Now a key note for the potatoes. Before adding the potatoes make sure that you soak them in cold water and rinse them in cold water. No one likes a starchy soup!!!




now on to the good stuff:




In a pot cook the bacon with the onion for about 5 minutes or until the bacon is semi crisp. Make sure not to burn the bacon. Once that is done set aside the bacon and onion without removing the bacon grease.




Add the potatoes to the pot and cook in high heat for about 5 minutes stirring occasionally. Season with a little salt. Add the bacon,onion, peppers, blended tomatoes, cumin, chicken bouillon.




Simmer for 15 minutes. let stand and add the pepper jack cheese stir in the cheese.




There you have it :) incredibly delightful :)

It's a.......:)

beautiful summer :) and boy has it been a busy summer :) One of the reasons as to why I have not been on here as often!! We did it, my hubby and I are fullfilling our dreams one day at a time. Brandon will be starting school in a week, I will be a working gal :) I am so excited that he is pursuing his passion, in four years my hubby will be Dr.Richards in pharmacy :) then I can retire, make babies and concentrate on photography.

I think I am going to be focusing more on photographing weddings and couples, I still love shooting families. But in the past month or so, I have had more clients inquire about their weddings :) this makes me gitty!!!!


I have also decided to make my profile private for reasons...... I never thought I would make it private, but you reach a point when there are people who are too nosy LOL

It is a brand new summer and I can not wait to see what the fall has in store for us. Maybe a baby, maybe a new puppy, maybe.... maybe baby :)

Opportunities :)

Oh dear blog, how I have missed you. I have just been so consumed with happiness these past few weeks. I am in a position in life where I can trully say that I am very content and happy :) I am more in love then ever before with my wonderful hubby :) He is so compasionate and makes everything better on those not so happy days. We have some upcoming changes and challanges but it will all be worth it in the end. My hubby will be going to school full time to become a Pharmacist :0 I know he will do great, as this is something he has wanted for a while. I am very proud of him and his accomplishements!!!

Things at work are great, I love being able to change peoples lives in a very small way. I am not an enrollment counselor but an actual guidance counselor. I love my students and I think they love me too. So much that one of my students wants me to shoot her wedding in Pensylvania, what a sweetheart :) I will be attending some upcoming graduations of students who at one point were at their ultime low, and now they are beyond that and have all the confidence to take on the world!!

My photography is also doing great, it has its hectic moments. But I am blessed to have the privilege of being a part of someones life. It is an unforgettable feeling to hear and feel the excitement of my clients when they see their pictures. For a while, I was thinking of putting photography on the back burner and focus on other things. God has a unique way of presenting opportunities..... he has kept giving and giving me so many wonderful blessings. I just figure things are happening for a reason, I may not understand them now but maybe will down the road.

So much more I would like to share but my sleepy eyes, and mind do not let me. I hope that I can keep you (my blogger friends) updated on what is going on in my life.

Yummy New Recipe for Shrimp Lovers



I love love LOVE shrimp. The recipe I will share with you has all sorts of goodies, and is delicious. You may substitute the wine for something else. Here is the recipe :)

Grilled Shrimp Caprese Courtesy of Olive Garden

Ingredients
Marinated Tomatoes:
1 1/2 lbs Roma tomatoes, cored* and cut into 1” pieces
20 medium fresh basil leaves, stems removed and cut into 1” pieces
2 Tbsp extra-virgin olive oil
1 Tbsp garlic, minced
1 tsp Italian seasoning
Salt to taste

2 Tbsp butter
1/2 cup white wine
11/2 cups heavy cream
1 cup Parmesan cheese, grated
1 lb capellini (angel hair) pasta, cooked according to package directions
2 cups mozzarella cheese, shredded
1 lb 26/30 or 21/25 shrimp, peeled and deveined

*Chef’s Note: To preserve juices and seeds, use a pairing knife to remove just the top of the core on each tomato.
Procedures
Preheat broiler.

1.COMBINE tomatoes, basil, olive oil, garlic, Italian seasoning and salt in a large bowl and blend thoroughly. Cover, set aside and marinate for at least 1 hour.

2.HEAT a large, nonstick skillet over medium heat. Add butter and let melt. Stir in white wine and bring to a boil. Add heavy cream and Parmesan cheese and bring to a simmer. Let sauce reduce to desired consistency.

3.ADD cooked, drained pasta and marinated tomatoes to skillet. Stir to thoroughly coat pasta with sauce.

4.TRANSFER pasta and sauce to serving platter and top with mozzarella cheese.

5.GRILL or SAUTE shrimp until internal temperature reaches 150°F and set aside.

6.PLACE serving platter in broiler for 2-3 minutes, or until cheese has melted.

7.TOP pasta with cooked shrimp and serve.

When you wish upon a star


Dear Blog,
I promise I still love you, I have just been consumed by so many great things that I decided to wait to share them with you. So a couple of months ago I was on the verge of quitting my job, I was afraid that I would not be able to use my degree without any experience. So as I tried to fathom why I continued to stay, opportunities came knocking on my door. I was chosen out of 300+ people in my division to be put on a new team. It was what I had been asking heavenly father for all along. A new position that would allow my talents and passion for my students to be used to good use. When I heard the news, it felt like a huge weight had been lifted from my shoulders. I now find my self being able to balance and focus on things that are important. I truly feel that god has a plan for me, and for it I am grateful. There have been many sleepless nights and tears shed not knowing what I was going to do with my career. I still do not know the full extent of my opportunity but I do know it was placed there for good reason. I am beyond grateful for every blessing god has bestowed upon me. There has not been 1 prayer that he has not answered for me. I am a lucky girl :0

I am also happy to announce that I have been given a great opportunity. I will be added to the Orpheums preferred vendor's of photographers. Currently there are only 3 others vendors listed. There skill is immaculate and I am not there yet, but it is an honor to be placed on the list. I will forever be in debt to my dear friend Lexie. She has been great, referring clients to me and sharing my visions. Funny thing is that I have known her only a few months, and I feel that her and I are kindred spirits. I met her at a photo shoot I was doing, she came up to me introduced her self and said, " I want you to take my pictures!!" (with a look of excitement on her face). I stood there puzzled because she said it with such conviction as is she had seen my work and followed it. We exchanged contact information, she set up a photo shoot at the Orpheum and the rest was history. Thank you Lexie girl, we are like peas and carrots are your hubby says :0

On the 16th of this month it will be a year when I decided to pick up my camera and make it a hobby. In that year, I have learned so much. It makes me excited to know that I can be a part of making memories, I love digging down to the core and finding those emotions. When I see emotions on my pictures, it literally gives me goosebumps because I can almost feel what my clients are feeling. For it I am very grateful!!!

If you have nothing nice to say then don't say anything at all

You know that saying, "If you have nothing nice to say then don't say anything at all"?!! Well, I try to live by that philosophy. Now, I admit that I do not always say nice things, if someone says something nasty to me, they might as well be prepared to hear something not as nice right back. The thing about the statement, is that I only say mean things in those occasions, despite how much I may dislike someone. I bite my tongue, until they provoke me for good reason.

So the other day, I overheard someone saying not so nice things about me, particularly in my photography, and professional (work) success. It was not what was said, but who was saying it. I let the person express them selves without saying a word. I stood there in silence. I was so naive that someone I considered a friend would say such cruel things. How can they be nice to you and then say those things behind your back. I guess that was my mistake and I should have paid more attention to the signs. I am a firm believer in knowing a person's true character by the way they speak of others. This person, would speak ill of their close friends not acquaintances. I am talking about close friends, close friends who you would have over for dinner, call to share your sorrows and happiness, friends who you know are there for you. I often would listen to how the person would complain and make themselves feel mightier then their close friends. Gulp, sigh.... I should have said something then.

At this point, I am grateful, that I was able to see their true colors, and true intentions. I am not angry at the person as none of the things they said were true about me. What I would like to know is WHY? are you so upset that I work hard to enjoy the fruits of my labor. Why?, would you not be happy for me? WHY?, would you not ask your self WHY is it that YOU are not happy with your blessings and so un happy about mine??? Many say it is because of jealousy, really??? Jealousy?!!! I guess I do not understand if that is the case, why they would be envious. Are they envious, that I went through many trials and tribulations? I did not get to where I am at with out any fears, struggles, stress and tears.

The funny things is that this person's wonders why I do not want them to be a part of my life. As I have distanced my self from them, and to be honest with you, I have been happier. I have noticed a change in my attitude, as I do not have someone negative to listen to. Does this make me a better person then you, the answer is no, but it makes me more grateful and appreciative of the close friends I have.

So to those friends that are my true friends thank you from the bottom of my heart. For all of your support and comfort on those not so good days and happy days :)

To my other friend mentioned, I am sure you will read this. Please do not think I am mad at you, I just hope that you will count your blessings and not everyone else's.

Love Emails

So during the course of my day, I sit and count the hours before I get to go home. Today is one of those days!! I have a bad case of the Monday's with all the beautiful weather we have had... who want's to be sitting inside an office!! NOT ME!!! But, you know what makes my day go by? My hubby and his sweet emails, 5 minutes into the day, I get an email. I love you :)from my hubby!! Every day without failure, and in between as well. Thought I would share how sweet he is read below ;)

Hormones......

Dear Blogger friends sorry for not posting anything in a while. Trust me nothing really exciting has happened: 0 Well some good things here and there, come may I will be making an announcement... no I am not pregnant. Some of you may already know :) Now, if I can only make it until May without going insane. I am a very private person and really do not share many personal stuff on my blog, but I am beyond that now. As some of you may already know, Brandon and I have been trying to have a baby. It has been an emotional roller coaster ride, last year was the worst. Watching all my friends, my sister get pregnant while I remained... not even close to being pregnant was really difficult for me. There were a lot of days that I cried out of the blue because all I wanted was a baby. So at the end of 2009 I made a new year’s resolution, I was going to go with the flow. Not concentrate on why my prayers were not answered right then and there, rather I would concentrate on things that made me happy. January was a little tough, but after that I can honestly say it has been smooth sailing until this month. I was put on birth control to help with my regulation. I have been moody, sensitive, depressed.... oh and the horrors it has done to me physically. I sometimes feel pregnant but I am assured by my doctor that it is perfectly normal and those are the side effects.... OK so the side effects are similar to pregnancy..... hmmmm So I apologize, it I have been cranky, brushed you off.... One thing it has done it has made me appreciate my hubby even more each day. If I cry, he lets me cry, if I am cranky he takes it (most of the time). Most importantly he is so compassionate and loves me on those days were I am a monster. Now and then he has to remind me that it is for the best and it is a process, and it makes me happy because I know all those bad days will give me happier days when I hold my baby. I don't want any sympathy, as I am beyond that point. I just needed to vent.

On happier news: 0 my business has been booming: 0 I have 4 weddings booked, and have my months booked before they even begin. God has been good to me, and for it I am very grateful. I think he answered my prayers, he said ... hey there silly girl, it's not your turn yet to get pregnant, I have other plans for you :) Yes, in my conversations with God he has a sense of humor :) Everything I have asked for God has granted me :) and my business booming is probably a little additional gift. I did not ask for it, I asked to be distracted from not being pregnant and that is what I got :0 I am still learning and I make mistakes with my photography, but I have made some progress.

Ok, so that pretty much sums it up folks, I am happy today as can be feeling nauseas but happy :)

Zuppa Tuscana


I love Italian food just as much as I love my mexican food. Every time I go to Olive garden I order the Zuppa Tuscana. What is not to love about this soup, it has bacon,potaoes, sausauge and some greens. The best part is, you can make it at home on cloudy, rainy days like today. Bon apetite!!

3/4 cup onions, dices 1/8 inc
1 slice of bacon 1/2 inch diced
1 1/4 teaspoon minced garlic
1 ounce chicken bouillon
1 quart water
2 medium potatoes, cut in 1/2 lengthwise, then cut in 1/4 inch strips
2 cups kale cut in 1/2 then sliced 1/4 inch strips
1 1/2 cup of cooked italian mild sausage
3/4 cup heavy whipping cream

cook sausage and set aside.
In a 3 to 4 quart sauce pan cook the onions and the bacon, for about 5 minutes or until the onion is clear. add garlic and cook for about 1 minute.

Add the water and chicken boillon. simmer for 15 minutes uncovered.
Then add the remaining ingridients and cook for an additional 6-7 minutes.

Walla :) you have your self your own Zuppa Tuscana and it is so much more delicious when you cook it at home :)

Dreams do come true



When I was a little girl I dreamed of becoming anything I wanted to be. As I got older I realized those dreams would take hard work and there would be people who would discourage you from that dream. I was always fascinated with the camera even at a young age, I would save my pennies and wash the dishes all to save money to buy a disposable camera. Sometimes it would take months before I had enought money to buy one, and in 10 minutes the film was all used. I would often be seen at the family gathering with my parents camera snapping away.

Then when I was in high school, my dream got pushed to the side as I became involved in dance. Finally senior year snuck up on me so I gave in and signed up for a photography class. Only to quite my second week because of how insecure I was, to think I would be in a class with peers who to say the least were immature.

I always regreted that decision because I wondered what would have happened if I would have stayed in the class. I took the road less traveled when I went against following my dreams, and everything has brought me to this point in my life.

For my 24th birthday my husband reminded me of that dream and suprised me with my first SLR digital camera. It was not new but hey I knew it had potential and the user (me) was rustic on the edges. I took my camera and began to shoot, using my cousins as my models then asking friends if I could take their pictures. Before I knew it I had people asking me if I could take their picture and asking how much I charged. "REALLY", you want me to take your picture?, and you want to pay me?!!" I thought these people are crazy, I thought am not at the level where I feel comfortable charging. I doubted my self, but everytime I would post my pictures, I had another stranger calling me saying, I saw your pics you did for.... or hey your that girl that takes pictures. As much as I hated people knowing me at work as the girl who takes pictures, deep inside I was a little flattered.

My wonderful husband, family and friends would always give me kudos, but again I let my humble side get the best of me. I though their suppose to say that, never really believing it.

Until one day, I had lunch with a friend and she said Ya (that's what friends call me at work) Guess what some girls on my team where talking about a photographer and admirring this photographers work, when she got a closer look it was my photoblog :) She said that's my friend Ya she's the best :) I will admit it I was so ESTATIC :)!!!

So I am coming up to a year, and I will for ever be in debt to my loving husband for encouraging to follow my dreams. He always finds the most sencere words to ecourage me and understands my passion for photography.

I may not be a pro, but I can honestly say that I don't feel as rustic. Photography has become an addiction, I think about it when I am at work, school, home and even when I am sleeping. I get dreams at night wake up and write things about my dreams, that is where I get some of my ideas from.

I hope that when I grow up, I become a famous photographer :) One can only dream, and if there is something I have learned in mt 25 years of life is that dreams do come true, they just some take a longer time to come true :)

Chicken Fontina


Who doesn't love Chicken!! Especially when it it smother in tomatoe sauce, and stuffed with basil and cheese. This recipe is not only easy but delicious. Here you go:

What you need:
4 chicken cutlets. ( you can buy them already made that way at the grocerie store or you may just get 2 chicken breast, slice it down the middle and ounf it out until it is thin)

1 clove of garlic
1 TBS of olive oil
1 20oz can of whole tomatoes in italian sauce
2 cups of shredded fontina cheese
8 fresh basil leaves
1/2 cup of white whine
salt and pepper for taste
1 TSP crushed pepper
toothpiks

What you do:
In a large skillet add the olive oil and the chopped garlic
Season both sides of the chicken with salt and pepper.
Add basil and cheese. start at the ends and roll. Secure with a tootpick you may need more then one. Repeat with all the other cutlets.

Place the chicken in the skillet. Make sure the skillet is medium hot. While it browns.

Add the can of whole tomatoes to blender or processor, add the crushed pepper and puree.

Once the chicken had been browned on all sides. Set aside. Add the 1/2 cup of white whine to the skillet to diglaze all those goodies (chicken flavors the chicken released)

Add the tomatoe puree to the skillet in which the chicken was cooked. Add the chiken and simmer the chicken in the sauce for 9 minutes. Turn chicken over and cook for an additional 9 minutes.

Bow-Chikiti-Bow!!

To make it complete and pretty looking. Once the chicken is cooked add the sauce on a display platter and place the chicken over it. I like to use the sauce and cook some anagel hair pasta :)

New year new recipes :0

So I have been neglecting my family blog because lets face it, I have been a busy bee :) From work to my second job better known as my passion for photography, and a little room for school, I have little time to update my blog. When I first started my blog it would consist of mainly recipes, but as I began my new hobby, my recipes declined. So I would need some reminders here and their to post a recipe ( Thanks Audrey for keeping me on my recipe toes) :) So here is a new low calorie recipe that I will share with you. It is beyond delicios and I loe it!! has all my favorites!!!

What you need:
1 cup zuchini cut into moons
1 cup julienned carrots
1 cup julienned red peppers
3 tomatoes
1/2 cup of shredded mozarella
2 1/2 cups of stuffed rigatoni ( you can find this item at any local grocery in the frozen section)*** you may also use your favorite stuffed ravaolis
1 tea spoon of dried rosemarry
1 tea spoon of chopped garlic
1/2 cup chopped basil
1/2 tea spoon of salt

* what you need to know:
roast peppers over a grill or if you want to cut your time in 1/2 put them in the oven and cook under the broil setting.

** after you have roasted your tomatoes and have let them cool, Peel under cool water and place inside a blender. Add the rosemarry, and salt, with 1/2 cup of water. Puree for 2 minutes.

In a pan add 1 table spoon of olive oil, and add the chopped garlic, julienned carrots and red peppers cook for about 3 minutes add the tomatoe puree and chopped basil,simmer for 5 minutes. ( you may add salt for taste)

In the mean while cook the stuffed rigatoni in boiling water. Cook the rigatoni according to the package usually 7 minutes.

Once the rigatoni is cooked, draine, and add to the tomatoe sauce. Once served sprinkle mozarella cheese on top.

pss I love to make this with some grilled chicken to help please those who have a bigger appetite :0

Awww one of my first weddings. I have come a long long way. Still learing the rules of the game but I sure do LOVE playing this game and gift God has given me. Now if only I can take pictures like this of Brandon and I... well hey I said I am still learning!! :) So what do you think? I am not too shabby? LOL
