There was always a Britney

Yes, I have joined the "Glee Fan Club"!!! Don't hate!! Last night as I visited with my aunt and made dinner, I reminded her that we had to plan and cook quickly because Glee would be on and most importantly it was a Britney Spears theme!!! She laughed, I told her she would not be laughing for much longer until she saw the show and knew exactly why I liked it!!! So after dinner, we sat on the couch as I tried to quickly catch her up on what was happening, I don't think I have ever spoken so fast in my life and I speak Spanish LOL. So as soon as it came back, it brought back memories of my high school days. My high school days when I was in shape, a lot thinner, had the strength of a horse and the speed of a cheetah!! So when the Britney dances where performed on Glee, I got up and did the dances along.... or so I thought. My aunt said I had not changed at all since I was a kid. Remember when you pretended to be a power ranger?, (I was always the pink one) when you watched the show, or if you were a boy you pretended to be Michael Angelo from the Ninja Turtles. Well that was me all over again during Glee, except I was not up to speed. After hitting my pinky toe, it was time for intermission for me :) Moral of this story, I am not in high school any more but there was always a Britney Spears song we performed too!!!

Mexican Potatoe and Cheese Soup with Roasted Peppers




Sigh it is that time of the season where grilling gets replaced with comfort foods, where people begin to get colds and resort to a nice bowl of soup :) Yummy soup my favorite. I love love love potatoes and I could eat them for days on end, I also love cheese. So I thought hmmm.... I need a couple of my favorite ingredients to make a soup. So last night I experimented in making a new soup, and boy oh boy was it delicious. So here it is I hope you all enjoy it as much as I did :)




What you need:


3 California peppers


2 tomatoes


2-3 potatoes chopped in quarter moon size


4 slices of bacon chopped into bite size pieces


1/4 cup chopped onion


1 tea spoon of ground cumin


1 chicken bullion cube


1 cup shredded pepper jack cheese




Prepare:


Roast the pepper and the tomatoes. Peel the tomatoes and add in the blender with 3 cups of water and set aside. Peel the roasted pepper remove the seeds. Chop into bite size pieces and set aside.


* if you do not want to roast peppers you can buy the chopped roasted peppers in a can.




Now a key note for the potatoes. Before adding the potatoes make sure that you soak them in cold water and rinse them in cold water. No one likes a starchy soup!!!




now on to the good stuff:




In a pot cook the bacon with the onion for about 5 minutes or until the bacon is semi crisp. Make sure not to burn the bacon. Once that is done set aside the bacon and onion without removing the bacon grease.




Add the potatoes to the pot and cook in high heat for about 5 minutes stirring occasionally. Season with a little salt. Add the bacon,onion, peppers, blended tomatoes, cumin, chicken bouillon.




Simmer for 15 minutes. let stand and add the pepper jack cheese stir in the cheese.




There you have it :) incredibly delightful :)
