I love my niece and nephew
Brandon and I had such a great weekend :) Aunt Deb was nice and let us share her happy day with her, her wedding :) Aunt Deb looked stunning and her smile was brighter than the sun that day :) We love you Aunt Deb :)!!
We also got to spend quality time with grandpa :) He is so sweet, I watched a John Wayne movie with him while Brandon and Mom were out running errands.
The best part about our weekend was that we got to see little Isabelle and Julian :) They are so CUTE!!!!! Julian is such a sweet boy who is full of adventures. Isabelle is my little princess, and I mean she trully is a princess. While she was here she tried on some of my red heels, and while I did my make up she wanted some on her as well :) I took a few pictures of the babies while they were here!! We hope to see them soon because we love them so much!!!

Yummy Dip :)
Ingridients:
3/4 cup sour cream
1/2 cup mayonnaise
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh chives
1/4 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper

Directions
Stir together sour cream, mayonnaise, parsley, chives, garlic, salt, and pepper in a bowl until combined well. Chill dip, covered, until slightly thickened, at least 1 hour (for flavors to develop).

New Camera.. any suggestions
Ok, so my hubby got me a cannon rebel last year... and I have to admit while it has been really nice to me I have not been as impresed by the pictures. I think maybe it has something to do with me :) LOL I was thinking of getting an extension lense and toys for the camera or just buying a new one.. I really like Nikon D5000 or any Nikon brand really. I really just want to get a toy or camera that captures the color and the moment in a split second. I love color and my camera is just plain :( I am so undecisive ahhh!! Does any one have any suggestion? It would be much appreciate before I make an expensive purchase :0

Green Chille Chicken Enchilas
Yummy :) :) I cooked some chicken last night but was so tired that I just put it in the fridge. This morning when my alarm clock went off at 6am I woke up so hungry and craved enchiladas for breakfast LOL So I took the quickest shower 10 minutes :) Usually takes me 20 minutes!! Got ready in 10 minutes. So I had a an hour and a half before I went to work. So I decided to take care of my craving and made some chicken echilada cassarole. I was very impressed by the results because I was in a rush. Here is my easy recipe :)
2 cans of condensed cream of chicken or cream of mushroom
2 cups of shredded chicken breast
1 tsp of garlic salt
1tsp ground black pepper
1 cup of chicken broth
2 cups of Monterrey jack cheese
2 cups of cheddar cheese
3 jalapenos sliced or chopped
2 cups of shredded chicken breast
1 tsp of garlic salt
1tsp ground black pepper
1 cup of chicken broth

2 cups of cheddar cheese
3 jalapenos sliced or chopped
1/3 cup of chopped roasted chilles
24 tortillas
1 tsp of olive oil
In a bowl add the shredded chicken, garlic salt, and black pepper mix and set aside
In a large sauce pan cook the jalapenos with the olive oil and sauté for 5 minutes. Add the cream of chicken, chicken broth and roasted chilles to the sauce pan. Simmer under low heat for 15 minutes. Make sure to stir occasionally :)
Set sauce aside.
Cut tortillas into quarters.
In a baking dish. spread a little of the sauce at the bottom, layer some tortillas, layer some sauce, layer chicken, sprinkle a little of the cheddar cheese and then the Monterey. Repeat the layers. The last layer should just be the tortillas and add the remainder of the sauce and the cheese.
Bake at 375 for 20 minutes :)
you may garnish with cilantro and add toppings such as sour cream or chives.
If you want to make sure the dish is not as spicy remove the jalapeno seeds.
Serve with a side of rice and beans :)

I always look forward to Sunday's waking up early putting on my best Sunday clothes to listen to the gospel! After a hectic week being at church makes all my stress and worries go away :) I love to hear people's testimonies and feel the spirit, it is truly a great feeling that I am blessed to have. A friend at work asked me what it was like to be LDS. I told her it was like being re-born and actually live life. I try to be a good example at work and other people that I come across that are not LDS. So this Sunday as I was listening to sacrament I could not help but be distracted by a lady that was late and sat in front of me. It did not bother me at all that she was late, I am late a lot. What bothered me was that after she sat down she took out her nail file and filled her nails all through sacrament. I wanted to tap her in the shoulder and tell her she could do that at home and to respect the gospel. I realized that I was putting to much thought into her rude behavior and as much as I tried it really upset me. I asked my self how do I know she is not multi tasking... and paying attention..!!! but you can tell when some one has your undivided attention and listens not just hears what you are saying. There is a huge difference between hearing someone and actually listening. I gave much thought about it at night and realized that just as much as she was being rude, I too was being rude by letting her actions interfere with my learning. I was so focused on her actions that I lost my self in translation and did not listen to the remainder of sacrament. So maybe this Sunday I will make sure not to sit by her :)

My babies
I have three lovely dogs :) Little Michi was given to us by Audrey :) best gift you ever gave us :) :)!!! Daisy was given to my mom by aunt Deb but her little brat was not nice to her :( So I took her in. She is so sweet, she always comes and lays her head on your chest :) she is such a cuddler! Michi is witty and very sassy :) I lover her cute little personality my mom calls her prissy because she walks around with her tail high :) but she is sweet :) Bailey is my oldest and he was my first dog :) What can I say about Bailey, he is so laid back and chill and loves to wear sunglasses. He is such a good dog and my beautiful niece Isabelle and she adores him :) He is really good with kids :) Here are their adorable faces :)
Eat your veggies cassarole ( calabasitas)
Eat your vegtables :0 I can not describe how much I love this cassarole! I think it has a lot to do with the fact that zuchini is my favorite vegtable! Calabasitas means zichini in spanish and this dish is not only easy to make but it is so delicious!
What you will need:
8 by 8-inch casserole dish.
1 table spoon of olive oil
1 medium onion, chopped
3 cloves garlic, chopped
6 zucchini, sliced into half moons 1/4-inch thick
2 plum tomatoes, chopped and seeded

1 cup chopped red bell peppers
1 tablespoon freshly chopped rosemary

Salt and freshly ground black pepper
2 eggs, beaten
1/2 cup half-and-half
1/4 cup grated monterrey jack cheese
1/4 cup grated Parmesan

In a large heavy bottomed saute pan over medium heat add olive oil. Saute onion, bell peppers and garlic until translucent. Add zucchini and tomatoes, about 7 minutes Add rosemary, and flour ( the flour is used because the veggies will release liquid, the flour will serve as a paste) . Make sure to mix the flour well, you do not want any clumps in this meal. Season with salt and pepper. Add mixture to the buttered casserole dish.
Preheat oven at 375
In a medium size bowl, add eggs, and half-and-half. Season with salt and pepper. Pour the milk mixture over the zucchini and sprinkle with both of the cheeses. Bake for 30 minutes.

Morning Delight Hashbrown Cassarole
Breakfast is the most important meal of the day :) Here is a recipe that is not only super easy to make but a crowd pleaser when having guest over :) You can also incorporate your favorite veggies into the cassarole*
What you will need:
A large bowl
9x13 cassarole baking dish
pre-heated oven at 350
Ingridients:
2lb bagfrozen hashbrowns thawed
2 packages of cubbed ham about 2 cups
1/2 cup chopped green bell pepper
1/2 cup chooped red bell pepper
1/3 cup chopped onion
1tsp pepper
1 tsp salt
1/4 cup milk
1 cup of shredded monterrey and cheddar cheese
5 large eggs ( if you want to make it healthier use just the egg whites but you will need to double the amount of eggs.
In a large bowl mix the ham, bell peppers and onion. In a seperate bowl mix the eggs and milk. Add the egg mixture to the other hasbrown bowl add the salt and pepper and 1/2 cup of cheese.
Grease the cassarole baking dish and add the mixture. Sprinkle with cheese an bake covered for 30 minutes and uncovered for 10 minutes or until set. If you stick a fork in the middle and it comes out clean it is done :0
Serve with a large glass of OJ and enjoy :)
