Shrimp Tacos w Green Chille Sauce


A girlfriend of mine at work requested that I post healthier food on here :) Just as a note from what I have learned in my previous nutrition class, being on a diet does not mean starving. It is understanding your bodies diet. Everyone's body is dessigned differently the same diet may not have the same results on everyone. To start a healthy diet you must gradually start to change your diet. You can not go from eating fatty food to the next day eating just chicken for lunch and not having dinner. Your body will be quicker to respond to your change if you gradually introduce the diet. Snacking can also be healthy. I suggest munching on fruits and veggies, this must also be kept in portion control. Drinking lots of water will also help with the transition of the diet and keep you from dehydration Staying healthy means eating 3 meals a day but having portion control. You have to learn point values, vitamins, and in meals incorporate 3 of the 5 ingridients from the food group. Being on a healthy diet is also not about eating just chicken and fish. There are so many ways to eat healthy while still eating our favorite foods. Here is a recipe that is healthy and very delicious.


The recipe calls for corn tortillas. But you can make them with wheat tortillas. You may also use iceberg lettuce leaves! If use tortillas I suggest using shredded green cabbage, red onions and bite sized cucumbers as toppings!


Roasted tomatillo green chille:

please see my recipe in a previous post.


What you will need:

1/2 Hass avocado, peeled, seeded, and cut into chunks
1 tablespoon olive oil
1 teaspoon chipotle or blended chili powder
1 teaspoon kosher salt
1 pound medium shrimp (about 20), peeled and deveined
8 corn tortillas
8 sprigs cilantro for garnish
2 limes, cut into wedges



Heat a stovetop or outdoor grill to medium-high. Mix the olive oil, chipotle or chili powder, and salt in a large bowl. Add the shrimp and toss to coat. Grill the shrimp until translucent, about 1 1/2 to 2 minutes on each side.

Grill tortillas, until slightly charred and pliable, about 20 seconds per side. Add 2-3 shrimp. Spoon desired avocados and green salsa. I like to also add spring of cilantro and sprinkle some lime over it.
